  • ( 500 grams) Silken or soft tofu
  • ( 1 stalk) Lemongrass, raw
  • ( 1 long) Red chilli, raw
  • ( 2 cloves) Raw garlic, peeled
  • ( 4 tbsp) Vegetable oil
  • ( 5 tsp) Reduced-salt soy sauce
  • ( 1 bunch) Fresh coriander
  • ( 1 cup) Brown rice
  • ( 1 tsp) Ground black pepper


    1. Cook rice, following the instructions on the packet.
    2. Drain the tofu and cut into 3cm chunks. Set aside.
    3. Finely dice the garlic.
    4. Combine the finely diced, garlic, lemongrass, chilli, and ground pepper in a bowl. Use half of this mixture to marinate the tofu — coat the tofu in the mixture.
    5. In a pan, add the oil and fry the tofu until it is golden brown on all sides. Then remove the tofu from the pan.


  1. To the same pan, add the remaining lemongrass mixture and cook for 2–3 minutes.
  2. To serve, place the crispy tofu onto a bed of rice. Top with the lemongrass mixture and soy sauce.
