  • ( 1 1/2 medium) Raw chicken breast
  • ( 4 cup) Cos lettuce
  • ( 1 medium) Green capsicum, raw
  • ( 2 medium) Tomato
  • ( 1 medium) Peeled cucumber
  • ( 2/3 cup) Green or black olives, drained
  • ( 3/4 cup) Fetta cheese
  • ( 1/4 cup) Lemon juice
  • ( 7 tbsp) Olive oil
  • ( 1/2 tsp) Dried oregano
  • ( 1/2 tsp) Ground black pepper


  1. Season the chicken with pepper.
  2. Add a small amount of oil to the pan and cook the chicken, until cooked through.
  3. Chop the lettuce, and cut the tomato, cucumber, and capsicum into small cubes. Mix in a large mixing bowl.
  4. Add the oregano, feta, lemon juice, and remaining oil to the mixing bowl. Stir.
  5. Serve the salad with the cooked chicken.
