Ingredients

  • ( 7.5) Red Radish
  • ( 0.5 cup) Desicated Coconut
  • ( 3 medium) Carrot
  • ( 1 medium) Red Onion
  • ( 1 bunch) Coriander Leaves
  • ( 2 tbsp) Lime Juice
  • ( 1.25 cup) Unsalted Cashew Nuts
  • ( 1 stem) Curry Leaves
  • ( 1 tsp) Ground Cumin
  • ( 1.5 tbsp) Vegetable Oil

Method

  1. First make the devilled cashews, in a bowl mix the oil and cashews together so that the cashews are evenly coated. Then sprinkle over the cumin and stir so the cashews are coated evenly. Add the cashew mixture to a pan as well as the finely sliced curry leaves and cook on a high heat for 1-2 minutes until fragrant and then set aside.
  2. Combine the grated, radish, carrot, the diced onion and the chopped coriander to a bowl and stir to combine evenly.
  3. Add the cashews and the lime juice just prior to serving
