Ingredients

  • ( 2 medium) Skinless Chicken Breast
  • ( 4 cloves) Garlic
  • ( 5 tsp) Ginger
  • ( 4 stems) Spring Onion
  • ( 1 bunch) Coriander Leaves
  • ( 1 long) Long Green Chilli
  • ( 1 tbsp) Lime Juice
  • ( 1 tbsp) Olive Oil
  • ( 0.75 cup) Basmati Rice

Method

  1. To poach the chicken in a pot, add the peeled whole garlic cloves, sliced ginger, the chopped dark green sections of the spring onions and coriander stems.
  2. Fill the pot with water allowing enough room so it does not over flow when you place the chicken in and bring to the boil for 5-10 minutes and then remove from the heat. And place the chicken breasts into the water and cover with a lid. Allow to poach for 30 mins.
  3. Cook the Rice as per packet instructions.
  4. To make the coriander sauce, thinly slice the white and light green parts of the spring onions. Finely chop the coriander leaves, and finely slice the green chilli.
  5. Combine the Sauce ingredients in a bowl with the lime juice and oil and mix to combine.
  6. To sever first place the rice on the plate follow by some sliced poached chicken. Ladle some poaching liquid over the chicken and rice and finally the coriander sauce
