Ingredients

  • ( 6 slice) Mixed-grain bread
  • ( 7 medium) Tomato
  • ( 1 bunch) Fresh basil
  • ( 7 tbsp) Olive oil
  • ( 1 medium) Red onion, peeled
  • ( 2 cloves) Raw garlic, peeled
  • ( 1/3 cup) White-wine vinegar
  • ( 1/2 tsp) Cooking salt
  • ( 1/2 tsp) Ground black pepper

Method

  1. Cut the tomatoes into large cubes, place in a mixing bowl and season with the salt and pepper. Allow to sit for 10 minutes as you prepare the rest of the dish.
  2. Remove the tomato from the bowl. Keep the liquid in the bottom of the bowl to make the dressing.
  3. Cut the onion into small cubes and crush the garlic.
  4. Add the onion, garlic, oil, and vinegar and mix to combine.
  5. Toast the bread and tear it into chunks.
  6. Return the tomatoes, bread, and basil to the bowl and combine.
