Ingredients

  • ( 2 cup) Rice flour
  • ( 1 tsp) Turmeric powder
  • ( 500 ml) Tap water
  • ( 1/3 cup) Tapioca starch
  • ( 1/4 cup) Coconut, milk, dried, powder
  • ( 1 stems) Fresh spring onion
  • ( 1 tbsp) Raw sugar
  • ( 1 medium) Brown onion, raw and peeled
  • ( 1 medium) Lean chicken breast, raw
  • ( 10) Raw prawn flesh
  • ( 10 whole) Blue mussel, steamed
  • ( 35 grams) Squid or calamari, raw
  • ( 50 grams) Bassa fillet raw
  • ( 1 cup) Raw bean sprouts
  • ( 1 medium head) Iceberg lettuce
  • ( 1 tbsp) Vegetable oil
  • ( 500 ml) Tap water
  • ( 4 tbsp) Fish sauce
  • ( 16 tsp) Vinegar
  • ( 1 long) Red chilli, raw

Method

  1. In a large bowl, mix rice flour, turmeric powder, and water. If in a hurry, use warm water.
  2. Add spring onion, tapioca starch, coconut milk extract, salt, and sugar.
  3. Set batter aside to stand for 1–2 hours. (If you have used warm water, wait half an hour instead.)
  4. In a round flat pan, heat a teaspoon of oil over a medium heat. Fry 5–6 pieces of onion, chicken, and seafood for one minute.
  5. Pour half a cup of batter onto the pan, or enough to thinly cover the pan. On one half of the pizza, place 5–6 pieces of onion, chicken, and seafood, and half a cup of bean sprouts. Cover with a lid and cook for five (5) minutes.
  6. Fold the remaining half of the pizza over the toppings. Cook uncovered for one (1) more minute, or until the bottom of the pizza is golden brown.
  7. Repeat the process with the remaining batter.
  8. To make the chilli-garlic fish sauce, mix all the ingredients except carrot in a bowl. Stir until the sugar has dissolved, then add the carrot.
  9. Wrap a piece of the pizza in a few pieces of lettuce leaves.
  10. Dip in the chilli-garlic fish sauce and enjoy!
