  • ( 4 medium) Skinless Chicken Thigh
  • ( 1 1/2 medium) Eggplant
  • ( 1/2 medium) Red Capsicum
  • ( 1/2 medium) Green Capsicum
  • ( 1 medium) Brown Onion
  • ( 1 tbsp) Vegetable Oil
  • ( 1 tsp) Garam Masala
  • ( 1 tsp) Ground Turmeric
  • ( 560 ml) Herb and Garlic Pasta Sauce
  • ( 1/4 tsp) Iodised Table Salt


  1. In a large pot, combine half the quantity of oil, onion, chicken, turmeric, curry power and salt, and mix well. Cover with aluminium foil and lid, and leave on low heat till the chicken is cooked through.
  2. Add remaining vegetables with remaining oil and cover with foil again, and leave on low heat until the vegetables are cooked.
  3. Add the pasta sauce. Leave to simmer on low heat for 15 minutes.
  4. Garnish with chopped parsley.
  5. Serve on its own or on a bed of cooked rice, burgul or couscous.
