Ingredients

  • ( 240 grams) Lean Lamb
  • ( 1 stem) Curry Leaves
  • ( 1 long) Long Green Chilli
  • ( 1.1 medium) Red Onion
  • ( 1 tsp) Ground Turmeric
  • ( 1 medium) Carrot
  • ( 1 cup) Frozen Green Peas
  • ( 1.5 cup) ChineseCabbage
  • ( 2 large) Egg
  • ( 4 regular) Roti Bread
  • ( 1 tsp) Garam Masala
  • ( 2 tbsp) Vegetable Oil

Method

  1. Start by preparing the roti by slicing into ½ cm strips and set aside.
  2. Heat the oil in a pan and add the curry leaves and sliced green chillies for 30 seconds and then add the onion and cook for 5 minutes before adding the curry powder and turmeric and then the diced lamb. Cooking for a further 3-5 minutes.
  3. Turn the heat to high and add the vegetables and cook for 5 minutes, add 30-50 mL of water to help coat the vegetables with the spices.
  4. Once the water has evaporated push the vegetables to one side and add the lightly beaten eggs and cook like scrambled eggs before mixing through the vegetable mixture.
  5. Add the sliced roti and cook for 2-3 minutes to heat the roti through the mixture.
