Ingredients

  • ( 1 cup) Reduced-fat Paneer
  • ( 1 medium) Green capsicum, raw
  • ( 1 tsp) Curry powder
  • ( 3 tbsp) Vegetable oil
  • ( 1 medium) Brown onion, raw and peeled
  • ( 2 cloves) Raw garlic, peeled
  • ( 3 tsp) Raw ginger, peeled
  • ( 2 medium) Tomato
  • ( 1 tsp) Dried chilli flakes
  • ( 1 tsp) Ground black pepper
  • ( 1 tsp) Cooking salt
  • ( 1 cup) White rice, raw

Method

  1. Cook rice, following instructions on the packet.
  2. Peel the onion and cut into small cubes. Crush the garlic and grate the ginger.
  3. Heat oil in a large pan. Add diced onion, crushed garlic, and grated ginger. Cook for 10 minutes until the onion is soft and sweet.
  4. Add the curry powder, salt, pepper, and chilli flakes. Stir through for 30 seconds.
  5. Add the diced tomatoes and cubed capsicum. Then add 250mL of water. Cook for 5 minutes.
  6. Add the paneer (cheese) and cook for 5–8 minutes.
  7. Serve with the rice.
