  • ( 4 medium) Zucchini, unpeeled
  • ( 10 stems) Fresh spring onion
  • ( 2 cloves) Raw garlic, peeled
  • ( 4 large) Egg
  • ( 3/4 bunch) Fresh parsley
  • ( 1 cup) Breadcrumbs
  • ( 1 cup) Reduced-fat fetta cheese
  • ( 1 tsp) Ground black pepper
  • ( 1/2 tsp) Cooking salt


  1. Preheat oven to 180 degrees (C).
  2. Grate the zucchinis into a bowl.
  3. Using a cloth, sieve or colander, squeeze the grated zucchinis and throw away the liquid.
  4. Slice the spring onions into thin slices. Add them to the zucchini, then add the remaining ingredients.
  5. Mould the mixture into patties (1/4 cup size is best) and place on a baking tray.
  6. Bake for 20 minutes at 180 degrees Celsius (C), until golden brown.
