Ingredients

  • ( 400 grams) Lean beef mince
  • ( 1 medium) Zucchini, unpeeled
  • ( 1 medium) Red capsicum, fresh
  • ( 1 cup) Wheat pasta, dry
  • ( 2 cup) Milk (Lite 1% fat)
  • ( 1 tbsp) Cornstarch
  • ( 1 medium) Brown onion, raw and peeled
  • ( 2 cloves) Raw garlic, peeled
  • ( 1 can) Canned whole tomato in tomato juice, undrained
  • ( 1 cup) Reduced-fat (15% fat) cheddar cheese
  • ( 1/2 tsp) Ground black pepper
  • ( 1 tsp) Cooking salt

Method

Sauce

  1. Heat the milk in a saucepan or in the microwave.
  2. Mix the cornflour with cold water and add to the milk.
  3. Continue heating the milk until it is thick — about five (5) minutes on the stove. Remove from heat.

Pastitsio

  1. Preheat oven to 180 degrees celsius (C).
  2. Add half the salt to a large pot of water and bring to the boil. Cook the pasta, following the instructions on the pasta packet.
  3. Cut the onion into small cubes. Crush the garlic. Cut the zucchini and capsicum into 2cm pieces.
  4. To a large pan, add the diced onion and crushed garlic. Cook until the onion is soft and sweet.
  5. Add the mince to the pan and cook for five (5) minutes.
  6. Add the zucchini and capsicum to the pan.
  7. Add the tomato and cook for another 5–8 minutes, or until the tomato sauce thickens.
  8. Mix half the cooked pasta with the tomato sauce, and the rest into the white sauce.
  9. Place the tomato mixture into a baking tray. Put the white sauce mixture on top, and then add the cheese.
  10. Bake at 180 degrees for 30–40 minutes.
