Ingredients

  • ( 3 medium) Chicken drumstick lean flesh raw
  • ( 4 large) Egg
  • ( 250 ml) Tap water
  • ( 1 1/2 medium) Brown onion, raw and peeled
  • ( 4 cloves) Raw garlic, peeled
  • ( 8 tsp) Fish sauce
  • ( 2 tbsp) Raw sugar
  • ( 3 tsp) Tamarind paste puree
  • ( 1 1/2 tbsp) Vegetable oil
  • ( 1 cup) White rice, raw

Method

  1. In a frying pan, heat oil on medium heat. Fry eggs for 10 minutes, or until golden brown. Set aside.
  2. Heat two (2) tablespoons of sugar in a pot until it becomes a golden-brown liquid. Add chicken and mix thoroughly. Cook on high heat for 3 minutes. Add hot water. Stir, cover and cook on medium heat for 10 minutes.
  3. Add eggs, onion, garlic, fish sauce, remaining sugar, tamarind powder, and salt. Simmer uncovered (without a lid) for 15 minutes. Stir occasionally.
  4. Remove the froth that forms on top of the pot.
  5. Serve with rice.
