  • ( 1 medium) Peeled carrot
  • ( 1 large) Fresh beetroot, peeled
  • ( 2 tbsp) Olive oil
  • ( 3 large) Egg
  • ( 5 sheets) Filo pastry
  • ( 1/2 cup) Reduced-fat mozzarella cheese


  1. Preheat the oven to 180 degrees (C).
  2. Grate the carrot, beetroot, and cheese.
  3. In a mixing bowl, add the grated vegetables, cheese, and egg. Mix to combine.
  4. Fold the filo pastry into 30cm squares. Spread oil between the layers.
  5. Place the vegetable mixture in a 3cm strip, 5cm from one edge of the pastry
  6. Roll the pastry into a roll, then cut into four (4) even parts.
  7. Bake for 20–25 minutes
