Ingredients

  • ( 2 cup) Green Beans
  • ( 2 tbsp) Vegetable Oil
  • ( 0.5) Chorizo
  • ( 2 cloves) Garlic
  • ( 2 medium) Tomato
  • ( 4 large) Egg
  • ( 4 tortillas) Corn Tortilla
  • ( 1 medium) Brown Onion

Method

  1. Bring a pot of water to the boil.
  2. Meanwhile prepare the beans by removing the tips and then slicing into 3cm lengths.
  3. Add the beans to the boiling water and cook for 2-3 minutes, until bright green but still firm.
  4. Heat the oil in a pan over medium-high heat and fry the chorizo until it is cooked, about 5 minutes.
  5. Add the diced onion and crushed garlic and fry for another 5 minutes, then add the green beans and tomatoes.
  6. When the tomatoes are softened, add the eggs and scramble until cooked to your liking. Serve with tortillas
