  • ( 2 medium) Chicken Breast
  • ( 6 cups) Canned Butter Beans
  • ( 1 medium) Brown onion
  • ( 3 cloves) Garlic, peeled
  • ( 4 tbsp) Oil Olive
  • ( 1 tsp) Paprika
  • ( 6 tsp) Tomato paste, salt reduced
  • ( 1 can) Tinned Tomatoes
  • ( 1/3 cup) Water
  • ( 5 cups) Spinach, fresh
  • ( 1 bunch) Parsley
  • ( 1/2 bunch) Mint


  1. To poach the chicken, bring a pan big enough to fit all of the chicken to the boil. You can flavour your poaching liquid with herbs, garlic, and/or stock.
  2. Once the water has boiled, allow to cool for two (2) minutes.
  3. Add the chicken and cover.
  4. In a pan, add the oil, diced onion and garlic.
  5. Cook until the onion is soft and translucent.
  6. Add the paprika, tomato paste, canned tomatoes and water.
  7. Cook for 3-5 minutes
  8. Add the butter beans and chopped spinach and stir through the tomato mixture.
  9. Cook until the beans are heated through and the spinach is tender.
  10. Serve with the poached chicken on top of the gigantes.
