Ingredients

  • ( 2 medium) Lean chicken breast, raw
  • ( 1 tbsp) Sunflower oil
  • ( 1 tsp) Brown mustard seeds
  • ( 1 stem) Curry leaves
  • ( 1 long) Raw green chilli
  • ( 1 medium) Brown onion, raw and peeled
  • ( 3 cup) White cabbage, raw
  • ( 1 tsp) Cooking salt
  • ( 1/2 tsp) Turmeric powder
  • ( 1/2 cup) Coconut, grated and dessicated
  • ( 2 regular) Naan bread

Method

  1. Boil a medium pot of water. When it has boiled, turn off the heat and allow to cool for five (5) minutes.
  2. Add the whole chicken breast. Place a lid on the pot. Remove after 20 minutes and slice thinly
  3. In a large pan, add the oil and heat. When it is hot, add the mustard seeds. Cook for 30 seconds and stir.
  4. Finely slice the chilli
  5. Add the curry leaves and chilli. Cook for 30 seconds.
  6. Add the onion and cook for five (5) minutes.
  7. Add the cabbage, coconut and water. Then add the salt and turmeric. Cook for 20 minutes.
  8. Add the chicken slices to the cabbage mixture.
  9. Serve with naan bread.
