Ingredients

  • ( 6 medium) Desiree Potato
  • ( 3 medium) Carrot
  • ( 2 medium) Green Capsicum
  • ( 4 medium) Zucchini
  • ( 1 2/3 cup) Frozen Spinach
  • ( 3 medium) Brown Onion
  • ( 10 cloves) Garlic
  • ( 1 1/2 long chilli) Long Green Chilli
  • ( 1 tsp) Ground Turmeric
  • ( 2 tsp) Black Pepper
  • ( 1/2 tsp) Iodised Table Salt
  • ( 2/3 cup) Basmati Rice

Method

  1. To prepare for the dish, cut all the vegetables. Slice the carrots and zucchini into rings, about 1 cm in thickness (for the zucchini, you might need to chop the larger rings in half), cube the potatoes. Wash thoroughly to ensure all the dirt is removed. Then roughly chop the leaves.
  2. Slice the onions into wings. Sauté lightly with some vegetable oil. Add the minced garlic, chilli, turmeric and salt. Sauté until fragrant.
  3. Begin to add and sauté the vegetables gradually. First, add the green beans. Next, add the carrots and potatoes. Leave covered on medium heat till half cooked.
  4. Now add the remaining vegetables. Cover and leave on low to medium heat until cooked through. You may need to add approximately half cup of water if necessary.
  5. Once cooked through, add salt and pepper to taste. Serve with rice.
